did you think i was joking when i said no excuses? 30 minute run in the drizz/slush/snow...it evolved (devolved?) throughout my route. i had intended on running a bit longer but the combination of wind and snow was hurting my face.
Citrus Salad
Just sharing a breakfast I'm loving right now...
Mix tangerines, oranges, and grapefruit; drizzle with a little orange blossom honey; top with greek yogurt...I just found full fat greek yogurt for the first time and it rounds out this salad perfectly.
Enjoy! That citrus comes in season halfway through winter is a beacon in the night.

Black eyed peas w/collards and apples
Another healthy dinner to share...
Boil collards and black eyed peas in separate pots (should only take 20 minutes each if the beans have been pre-soaked). You'll need about two cups each.
Saute one shallot, three garlic cloves, and 1 1/2 apples (I used fuji and pink lady) in olive oil over medium heat. Add a sprinkle of cinnamon and red pepper flakes.
